Belizean Hot SaucesThey don't cook chili in Belize -- well, maybe a Gringo or two does -- but they sure use a lot of hot sauce. Every restaurant has bottles, sometimes on the table, but you can always get your own bottle while you're eating, and probably buy one to go!
The standard sauce is "hot" -- it is hotter than most American hot sauces, but not incredibly so. It has a lot of flavor, supplied in part by carrots (Marie's secret ingredient.) Flavor/Heat = 3/3 You can't find Marie's in most stores in the US. Instead, you can find Melinda's, a rip-off (copy) which I discuss on the Marie Sharp page. There are several different "heats" ... shown below.
(right) Marie Sharp's Mild Habenero. You can't find this in a restaurant in Belize!! They sell it in many stores, but most people think the Hot (above) is just right. I happen to like the mild because it has a flavor much like Trappey's Red Devil, which used to be my favorite for scrambled eggs and omeletes.. Flavor/Heat = 3/2

This sauce does have a warning on the bottle. "WARNING! Heat level XXXXX. Keep out of reach of children. Avoid contact with eyes or skin. Got water?. It is the only sauce I've run into which is hotter than "Dave's Insanity Sauce" -- which ruined my afternoon at a party in 1995. Of course, it is my secret ingredient when I make Chili or Gumbo. Flavor/Heat = 4/9
(left) Hot Mama's Habenero Hot Sauce. "Hot Mama" is the wife of my friend Howard Oldham. They have a website here. It is a Marie Sharp copy. I like it!! Howard's idea was to make it available in the US, because Marie Sharp's was so hard to get. Howard's is also hard to get, but I have two cases of it!! Write me and I'll send you a bottle.
