Chilaquiles (pronounced Chill -a- KEY - lays) is a traditional Mexican Breakfast.   Wiki describes it here.

Essentially it is Corn Tortilla strips fried golden brown and then softened with RoTel (Diced tomatoes and green chilles) 

You add plain scrambled eggs to this mixture and it's ready to eat!!

You can add a lot of other things like onions, cheese, meat.  My friend Margaret Briggs suggests that you can "clean out the refrigerator" if you like

Here is a more formal recipe.  You can get involved with this dish, but... for Pete's sake --- it's early in the morning!!!
