Hot Sauce

Hot Sauce is an essential part of western cooking!!  When I was in the Army, we used Catsup to correct a variety of deficiencies in the cooking... hot sauce is a better way.  Here are the sauces I have so far:.  

Louisiana Hot Sauces.   Avery Island is the home of the Cayenne pepper -- an essential part of Cajun cooking -- and three of the best known (if not the best) hot sauces.  

Belizean Hot SaucesBelize is the home of the Habeņero pepper, one of the two hottest peppers known to man!  On the Scoville Scale (read about that here on Wiki**) the habeņero is about three times as hot as cayenne, about 50 times as hot as a jalepeņo.   Belizeans use hot sauce every day, as part of their routine for eating!!

Texas Hot Sauces. Of course, Texas is the home of Chili, and Texans would like you to think that they know all about peppers.  Actually, the best known hot sauces are NOT from Texas.  I only have one in my list, but I will entertain more additions.*. 

Mexican Hot SaucesIn my trips thru Mexico, I did not note hot sauce on the table in the restaurants.  There are a number of Mexican hot sauces on the market here in Gringo-land, and I honor some of them here..  

Arizona Hot Sauce.  Tombstone restaurants have to have hot sauce!   This is what they give you.  

California Hot Sauce.  New discovery!  My friend Tom Coffman gave me a big bottle!!

Colorado Hot Sauce.  New!!  My friend Roger Jones sent me five bottles. 

Salsa ...means Hot Sauce!  Not thin runny stuff, but thick juicy sauce that comes in a can or a jar.

China. Western China is the home of some pretty hot food!  (Hunan, Szechwan) but the hot comes from Chinese hot peppers, cooked in the dish.  I don't recall any hot sauces on the table.*

India.  Indian curry is terribly hot (every where but India) and there's a story there, but I'll save it for later. Wiki says one of the two hottest peppers is from India.  I don't have an Indian Hot Sauce, but I'm open to suggestions.*

* Please write me here, with comments and additions.  Better yet, tell me about a good forum, list or group.  Some of the groups on Yahoo are infested with spam. Write me if you have a good one.

** Wiki calls "Hot Peppers" Chili peppers.  Obviously written by a Texan -- who won't admit that there are lots of hot peppers, and most of them are not used to make Chili.  Wiki has an hot sauce article here, full of these same biases.  I don't claim to be an expert on all kinds of hot sauces -- I can only tell you about my experiences over the past FIFTY YEARS.  <grin>
